Calihan Catering - Blue Cheese Martini

Here's a new tweak on a deconstructed martini. It's not a drink, it's an appetizer and is brought to you by Calihan Catering of Chicago.

This past fall, LFS.com had the good fortune of traveling to Chicago and meeting with several operators to video recipe some of their creations using Lactalis Foodservice's brands of cheese.

One such operator was Calihan Catering, a generational offsite catering company that specializes in high end event planning and foodservice.

Lee Calihan graciously allowed us to video their Blue Cheese Martini and we decided to share it with you for the upcoming holiday party season.

Some notes to the video:

1. The plastic containers used to store the vodka shot are perfume sample size applicators. Here is a link to where you can find them online.

2. Chef Gomez used Galbani gorgonzola as the base of his gelee.

3. This appetizer does not get your customers drunk; it gets them laughing - always a bonus.
