Jenny, whose blog Nourished Kitchen, is a treasure trove for those interested in food, nutrition and farm sourcing recently published an interesting list of the relative nutritive value of foods.

Animal and plant sources were both considered. And the most nutrient dense food of either variety was -gasp- liver!

Take a bow mothers everywhere for insisting on liver night at the family dinner table

If we were in charge of the National Liver Board Association we would jump on this and market Liver Wednesday to foodservice industry in a similar way Meatless Mondays has gained traction.

After all, Liver Wednesday seems to be the more nutritious and  beneficial choice.

It might be the most dense in nutrition, but it also is somewhere around 400% of your daily cholesterol intake!
