Ferran Adria's revealing interview with the Wall Street Journal let's more than a few kitchen secrets out, principally among them that is that his El Bulli Restaurant "never made any money." This statement is not surprising but it cuts to the core of the foodservice business. It's a very tough business to make money at. The margins are just that thin when you add everything up.
